Actually, I go hiking quite a bit in the back country.
Your best defense against a bear is to get rid of your back pack, and lie down on the ground, face down, as if you were dead.
Bears are not predators. They only attack when they feel threatened. Therefore, if you lie on your stomach, acting "dead" the bear will find you harmless, and move on.
I have seen bears as close as 20 feet away from me before in the middle of nowhere... and trust me, this works, though it is scary as hell.
